Grandma Kitty’s Applesauce Cake

  • 1 1/2 c sugar
  • 1/2 c shortening or butter
  • 1 1/12 c applesauce
  • 1 c raisins
  • 1/2 c nuts
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 2 tsp baking soda
  • 2 1/2 c flour
  • 1/4 tsp salt

Method:

In one bowl combine sugar, applesause, and shortening, mix until smooth. In another bowl combine cinnamon, allspice, baking soda, flour and salt.  Add the liquids to the solids and mix well. Add raisins and nuts, put in 8×5 pan. Bake at 350 for 40 mins or knife comes out clean.

Cindy’s Pumpkin Pie

“This pumpkin pie recipe uses melted ice cream instead of evaporated milk. The result is delicious. I have never brought home leftovers of this pie. I recommend using fresh pumpkin, but canned pumpkin can also be used.”

Ingredients

  • 1 1/2 pints vanilla ice cream, softened
  • 3 eggs
  • 1 3/4 cups pumpkin puree
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 (9 inch) unbaked pie shells

Directions

  1. Preheat oven to 425 degrees F (220 degrees C.) Place ice cream near the warm oven to soften.
  2. In a large bowl, whisk together the eggs. Stir in the pumpkin puree, sugar, salt, cinnamon, ginger, and nutmeg. Mix in soft ice cream until smooth. Pour filling into two 9 inch pie shells.
  3. Bake for 15 minutes in the preheated oven. Reduce temperature to 350 degrees F (175 degrees C), and bake an additional 30 to 40 minutes, or until filling is set.

Priceless Pecan Pie

Ingredients

  • 1 (9 inch) deep dish pie crust
  • 1 (8 ounce) package cream cheese, softened
  • 1/3 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 3 eggs, beaten
  • 1/4 cup white sugar
  • 1 cup light corn syrup
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a medium mixing bowl, blend together cream cheese, 1/3 cup sugar, and 1 teaspoon vanilla. When mixture is smooth, spread into bottom of pastry shell. Sprinkle cream cheese layer with chopped pecans.
  3. In another medium mixing bowl, combine eggs, 1/4 cup sugar, corn syrup, evaporated milk, and 1 teaspoon vanilla extract. Whisk until mixture is smooth. Pour mixture over pecan layer.
  4. Bake in preheated oven for 35 to 40 minutes, until set in center.

Irish Cream Bundt Cake

Ingredients

  • 1 cup chopped pecans
  • 1 (18.25 ounce) package yellow cake mix
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 4 eggs
  • 1/4 cup water
  • 1/2 cup vegetable oil
  • 3/4 cup Irish cream liqueur
  • 1/2 cup butter
  • 1/4 cup water
  • 1 cup white sugar
  • 1/4 cup Irish cream liqueur

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. Sprinkle chopped nuts evenly over bottom of pan.
  2. In a large bowl, combine cake mix and pudding mix. Mix in eggs, 1/4 cup water, 1/2 cup oil and 3/4 cup Irish cream liqueur. Beat for 5 minutes at high speed. Pour batter over nuts in pan.
  3. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the cake comes out clean. Cool for 10 minutes in the pan, then invert onto the serving dish. Prick top and sides of cake. Spoon glaze over top and brush onto sides of cake. Allow to absorb glaze repeat until all glaze is used up.
  4. To make the glaze: In a saucepan, combine butter, 1/4 cup water and 1 cup sugar. Bring to a boil and continue boiling for 5 minutes, stirring constantly. Remove from heat and stir in 1/4 cup Irish cream.
